Cod Fillets (500g)

As trawler agents we normally have boats in the Irish Sea sourcing the exceptional fish that can be caught in this sea. The strong currents help the fish become athletic and have better structure to their flesh compared to fish in weak current fishing grounds. Not all species choose to live in the Irish Sea, shame that!

The picture of me holding a Cod is the start of our daily work process. We start at either 4 or 5am. When we arrive in work our haulage company has collected the fish from boats normally around midnight and delivered it to our factory so it is there when we arrive. We sort out the fish into it varieties and then we grade each variety into sizes. Then we sell it, sounds so easy!
