Now we are into the tricky business here, shellfish has a reputation like an American President but we have gone that extra mile to ensure exceptional quality, well all the way to Galway.  We only buy from Kelly’s Shellfish and they deliver Mussels, Clams and Oysters on Thursday night so we have them for the Farmers Market on Friday morning.  Kelly’s have won more awards than Dublin Footballer Jack McCaffery. The Clams are looked after so well and given a great wash and purification that all you need to do is steam them for a few minutes.
