Mussels (1kg)

Now we are into the tricky business here, shellfish has a representation like an American President but we have gone that extra mile to ensure exceptional quality, well all the way to Galway.  We only buy from Kelly’s Shellfish and they deliver Mussels, Clams and Oysters on Thursday night so we have them for the Farmers Market on Friday morning.  Kelly’s have won more awards than Dublin Footballer Jack McCaffery. It’s a cheap and easy win for us all, just melt a little butter and olive oil add so finely chopped onions and a few cloves of garlic squashed and cook on a low heat then add the mussels and a very small drop of white wine, put the lid on and after a few minutes yahoo, get some insanely good bread from ( Scéal Bakery) to soak up all the flavors and let the good times roll. Don't forget a good handful of fresh herbs to go with it because obviously I did or it would be the sentence above!
